Gold Coast Mojito
Summer is here and the Mojito is a classic drink perfect for making in big batches for a crowd. Try swapping strawberries for other fresh fruits like peaches or blackberries.
This cocktail uses an aged Añejo rum instead of white rum makes this drink a little smoother and gives it its gold hue.
Ingredients (for 2)
3.5 oz Brugal Añejo Rum
2.0 oz Mint Infused Syrup
1.0 oz lime juice
Top with Strawberry Spindrift
Prickly Pear Bitters
Dried Lemon Garnish
Fresh mint and strawberries (optional)
In a chilled glass, add the mint simple syrup, strawberries and mint leaves (if using). Press firmly with the back of a spoon or a muddler to break apart the strawberries and press the mint. Avoid pulverizing. Stir in the lime juice and rum. Fill the glass with ice and top o with strawberry Spindrift and a few drops of bitters. Garnish with dried lemon.
