The Surry Cocktail Recipe

Chef Alley was devastated to hear that a fire had broken out at the S. Wallace Smokehouse in Surry, VA, earlier this year ceasing the operations of the legendary Edwards Virginia Ham. To pay respect to the tragedy, Pasture’s The Surry, with its savory notes of hickory, is a tribute to the town and Chef Alley’s favorite hickory smoked ham.
The Surry is an ideal blend of savory and sweet that is the perfect after work sipper to unwind from a long day.
1.5 oz. Old Forester bourbon
1.0 oz smoked ginger syrup
0.5 oz lemon juice
Splash of soda
Combine the first three ingredients in a shaker tin with ice. Strain into a rocks glass. Fill glass with ice, and top with soda water.
For the smoked ginger syrup:
0.5 lb ginger root, cleaned
1 cup granulated sugar
1 cup water
Hickory chips for smoking
Prepare a tabletop smoker to manufacturer’s specification with hickory chips. When the chips are smoking, add the ginger in batches, and smoke for approximately 5 minutes. Place the smoked ginger in a pot with the sugar and water. Mix well, and bring to a boil. Reduce the syrup by 25%, remove from heat, and allow to cool to room temperature. Transfer the ginger mixture to the pitcher of a vita prep, and puree until very smooth. Strain the syrup through a fine mesh sieve, and reserve until ready to use.
