Pennyroyal Gin and Tonic Cocktail Recipe
The Head Bartender at Pennyroyal Bar in Seattle, Chad Phillips, just launched a Spanish-style G+T menu. The Spanish style, unlike the English one, is a beautiful mix of gin, tonic, herbs, fruit and citrus peels displayed in a larger bowl glass to better showcase the aromas as well as the colorful ingredients. It’s refreshing and bright.
Since there are so many wonderful gins being distilled in and around Seattle, Chad decided to show some of them off. Each G+T features a local gin and is paired with a house made tonic that has been specially created to showcase specific botanicals in each gin, and garnished with less usual ingredients.
Here we present one of his creations.
2.0 oz Copperworks gin
1.0 oz tonic syrup (recipe below)
5.0 oz Club soda
Garnish with Star Anise and Orange
Combine the ingredients in a wine glass filled with ice. Garnish and serve.
4 cups water
3 cups sugar
6 tablespoons citric acid
3 tablespoons cinchona bark
3 stalks roughly chopped lemongrass
1 orange zest
1 cup star anise
4 oranges (fruit only, no peel)
Combine water and sugar in sauce pan over medium heat until combined, add rest of ingredients, simmer for 30 minutes, strain.
